About the Event

This weekend workshop we are going to be sharing the ancient skill of butchering a Deer and using it from nose to tail.

We are very excited to share this ancient life skill with you all.

Not so long ago humans were hunting all their own meat and gathering roots, fruits and seeds alike. 

These skillsets are apart of our physiological makeup and to relearn them is to not only deepen connection with the food you're eating but to connect to a long lineage of hunter gatherer ancestry. 

This weekend will be held with utmost respect and honour for the Deer we will be processing, the Deer has been hunted ethically and consciously and it is a real gift to be able to work with it in this intimate way.

What is a Deer Break down?

You will learn how to butcher the whole animal from nose to tail taught by a professional Wild Game Butcher and Hunter. 

What you'll learn:

- Skinning techniques, tools and efficiency

- Hanging methods, what is required

- Butchering different cuts and how to cook them 

- Fat Rendering

- Organ identification and cooking with the organs 

- Different bones and their uses (bone tools)

- Fleshing and Tanning the hide

- Cooking with Deer/Wild Game

- Knives and Tools needed

- How to make Wild Jerky

- Making Bone Broth

Saturday:

In depth workshop on Breaking down a Deer

Cooking demonstrations, butchering demonstrations. 

Lunch and Dinner will be fresh cuts of the Deer with foraged greens & local ingredients. 

Sunday: 

Natural Tanning and Bone Tools

We will flesh the skin and prepare it to be Brain Tanned using the deer brain and continue to soften the skin until the process is complete. You will be shown and participate in various softening methods and learn the whole process of fat tanning a hide. We will then make useful bone tools such as awls, softening tools and needles.

Facilitators 

Andrew Joulianou aka The Bald Chef

Andrew is a wild game hunter and chef who runs educational workshops on hunting wild game and cooking with wild game. His aim is to promote a sustainable and ethical future not just in the food industry though in every aspect of life.

Allowing people to understand the beauty of life free from all the artificial happiness the city life promotes. "It allows for our primal instincts to come into action, taking us back to our ancestors, when all we did was survive as hunters and gatherers. Free from all preservatives, hormones, antibiotics and over consumption of resources.

Consciously consuming, is the new way of life it links in with our self worth and it allows us to immediately become part of a movement that will benefit humanity and the world for future generations to come."

Eva Angophora Wild Beings

Eva has been eating primarily wild game since 2018, devoting to her values of only wanting to consume animals that have lived a wild and natural life style. Through this period she has learnt how to scavenge for wild meat and learnt how to respectfully take an animals life and process it. She has had experience processing Ram, Goat, Cow, Kangaroos, Possum, Roosters, Ducks and Fish. Her passion is to eat like our ancestors, learning how to salvage every last edible or useful part of the animal, which led her into learning how to tan the skins naturally, render fat and make bone tools. 

Eva's passion is educating people on the benefits of eating wild meat and how to do so in a local and sustainable manner. 

The weekend course will be held on lush private property in Ourimbah, Central Coast.

We will be off grid camping so bring all essential camping items.

There is a composting toilet and shower block. Fresh drinking water available.

We will provide Lunch and Dinners both days, BYO breakfast and snacks. 

Please wear clothing that you dont mind getting dirty. Bring swimmers because there is a beautiful creek on sight!

This workshop is limited to 11 people. Payment plans available get in touch.
